Ushbu tadqiqot ishining maqsadi respublikamizning tog‘li va tog‘li hududlarida yetishtiriladigan olxo‘ri, shaftoli va o‘rik mevalaridan olinadigan yog‘larning fizik-kimyoviy xossalarini o‘rganishdan iborat edi. Bu ishda mahalliy mevali daraxtlardan olxo‘ri, o‘rik va shaftolidan presslash natijasida olingan yog‘larning fizik-kimyoviy xossalari tahlil qilingan. O‘rik va shaftoli donasidan olingan yog‘larning fizik xossalari olxo‘ri donasidan olingan moylar bilan solishtirildi. Ushbu tahlil davomida o‘rik va shaftoli donasidan olinadigan yog‘larning fizik xossalari bir-biriga juda o‘xshashligi, olxo‘ri yadrosidan olinadigan yog‘ning ayrim ko‘rsatkichlari shaftoli va o‘rik moylaridan farq qilishi aniqlandi.
